Explanation of Our Dishes Tacos: Folded fried crisp or soft corn tortilla filled with a meat or beans. Enchilada: Fried soft corn tortillas filled with beef dipped in Red Enchilada Sauce and topped with cheese. Enchilada de Queso: Same as above but filled with cheddar cheese instead of beef. Enchiladas Verdes: Filled with chicken then dipped in Green Tomatillo Sauce and topped with cheddar cheese and sour cream. Tostadas: Flat crisp fried corn tortilla covered with refried beans, meat filling, lettuce, tomato sauce and cheddar cheese. Tamales: These have been made in Mexico for a long time, the Aztecs called them Tamalli. They are made with corn husks spread with masa (corn meal) and wrapped around different fillings. We make them with two fillings: Pork in Red Sauce or Chicken in Green Sauce. Chile Rellenos de Queso: Green pepper stuffed with cheese, dipped in egg batter and deep fried a golden brown then topped with a light tomato sauce. Flautas: A 6 inch long, rolled up, crisp fried taco filled with chicken or cheese and topped with guacamole and tomato sauce. Guacamole (Avocado Dip): Mashed avocados with onions, chile sauce, tomatoes and seasonings. Frijoles Refritos y Arroz (refried beans & rice) Served with all our dinner combinations.
